"Guiness-gasm Cupcakes"

First, I must give credit where credit is due, this recipe was stumbled upon at SF Food Wars, and certainly peaked my interest.  The tiny mustaches that adorned the cupcakes and prettily framed plaquard create visions of grandeur amongst my friends and family. After enlisting the help of a friend (and many additional trips to the grocery store, I'm very bad at gathering everthing beforehand) this recipe was well under way.  By no means is this recipe quick, with a bittersweet chocolate center, and liquor frosting this rich treat has many seprate steps but is well worth the time to create (which will take over an hour, easily!) but by golly are they delicious.

Our first attempt was rather successful. We even went so far as to make up the mustaches to top our masterpeices (trust me, it made them tasted better) however, we used semi-sweet chocolate instead of bittersweet which made for a shocking, eye-squinting bite. Beware of mistaken ingredients. Our second attempt used "fake" sour cream. Again beware, they were a heavy, ugly mess. Turns out it is crucially important to use real ingredients, lesson learned, guiness cupcakes, lesson learned.

My second suggestion comes from a frosting malfunction. Their ingredient list calls for only butter and baileys, but my posessed electric beater threw the powdered sugar across the room in a fury. My friend and I alleviated the problem by adding some of the heavy cream that we used to make the filling. It kept the sugar in the bowl while making the consistancy creamy and perfect.

When adding the bailieys to the creamier frosting, only add what the recipe calls for, it will not taste strong at first but after some time the flavor shows itself in full force. We added double and by the next morning, it was overpowering.

Our (succesful) creations were a smash hit at my friend's job where she waitresses where the owner took her by the shoulders and exclaimed, "These are the best cupcakes I have ever eaten in my life! I should put these on the menu!" And with a response like that, I have no problem encouraging you readers to try them out and show them off to friends and family! Don't forget to make the mustaches!
