Sugary addition to Hollis Hills Farms will keep local tradition alive

Lunenburg has long boasted a strong farming community. Helping to keep that tradition alive is local resident Jim Lattanzi, owner of Hollis Hills Farm, who recently purchased Ewen’s Sugar Shack, newly named Hollis Hills Farm Sugar Shack
“Remember when you were a kid, and this time of year came around, you’d look for the buckets on the tree and know it was syrup time,” said Lattanzi who is excited about his new venture.
Everything seemed to fall into place in the past six months for Lattanzi to expand his current business of livestock, hay, and pasture management to include syrup production.
The syrup season runs from February to April and fits right into his current schedule at Hollis Hills Farms.
"Syrup will fill in our slow part of the year,” said Lattanzi who began his foray into the sweeter market of syrup last year.
When the sugar shack, an establishment over four decades old became available, Lattanzi sprang into action.
“Because Ewen’s hadn’t tapped in the last few years, the equipment was sitting, but in running order,” he said. “This is something that is unique to Lunenburg, and is something that helps round out our small farming community,” said Lattanzi, proud of his town’s farming diversity.
