Bootlegger changes include updated sewer

At the Sewer Commission meeting Tuesday night, Steve Pederson of Weston & Sampson, an environmental consulting firm, presented Bootlegger’s Restaurant plan for updating its sewer connection and waste disposal.


    “The wastewater disposal system dates back to 1971,” Pederson said. “There was no sewer in the area originally, but along came the municipal sewer property. The connection as of right now appears in the front kitchen and bathrooms that work by gravity, and the bathrooms in back stay on a pipe that went to the old septic tank into a leach field…this is the current set up.”


    The proposed plan will see to the renovation of the septic tank for a new use.


    “The issue is having to deal with an external grease interceptor that fits the regulations enforced by the Commission,” Pederson said. “We’re looking to use existing facilities that comply with those regulations.”


    The kitchen’s gravity sewer already features an internal grease trap. With the proposed renovations, the 4000-gallon septic tank would be converted into an all new grease trap, which would exceed the set regulated limit.


    Commission Member Amedeo Bilotta raised no objections, but did briefly question the septic tank’s ability to handle solids after its renovations.
